An award-winning village pub, The Swan sits at the heart of the picture-perfect village of Southrop. Part of Thyme (an historic Cotswold estate with hotel, cookery school, spa and a new restaurant opening in autumn 2018), the menus celebrate the ingredients and flavours of the farm and kitchen garden. What can’t be grown at Thyme is carefully sourced from suppliers in the area, with principles of sustainability and a hand-made, home-grown ethos underlining the menus. Locally distinct brews, wines and non-alcoholic drinks lead to a really interesting drinks menu; all the wines are available by the glass, carafe or bottle and the house wine is on tap. A blackboard bar menu ensures a country pub feel and the seasonal table menu has a good choice of simple, rustic dishes. Recently refurbished, The Swan is complete with traditional bar; low-ceilinged restaurant and further tables in a spacious garden room which opens to two courtyards for lazy, long summer lunches; sofas for relaxed socialising; open fires for the winter; and a snug for more intimate dining.
