The Witchery by the Castle

Located in a historic 16th century building at the gates of Edinburgh Castle, James Thomson's Witchery is the most atmospheric and spectacular dining destination in the city. A unique setting, stunning interiors and superlative food, wine and service combine to create memorable dining experiences for locals, visitors and celebrities alike. The staff use the best of Scotland's produce including Angus beef, lamb, game and seafood. Nestled in the most historic part of the building, The Witchery dining room is rich, warm and atmospheric, with tapestries, mirrors and carvings hanging on oak-panelled walls. Spectacularly painted and gilded ceilings, similar to those at the Palace of Holyrood House, celebrate the links with France in the Auld Alliance, whilst much of the panelling was rescued from St Giles Cathedral and a Burgundian Chateau. Gilded antique leather screens, polished church candlesticks and opulent red leather seating complete the surroundings of this splendid dining location.

The Witchery is proud to support the work of some of Scotland's finest food producers, growers, fishermen, farmers, cheese makers, butchers and gamekeepers. We use the best Scottish produce that we can find including Peelham Farm's outstanding Berwickshire Tamworth pork and Lleyn-cross lamb. Findlay's of Portobello supply their award-winning traditional haggis. Renowned East Lothian butcher John Gilmour's Scotch beef  is 28 day aged and fully traceable and we are members of the Scotch Beef Club. Red deer are shot on the hill in the Borders' and pigeons on Perthshire estates. St Brides are passionate about poultry at their family-owned Strathaven farm raising slow-grown free-range birds.

King scallops are hand-dived in the Grade A waters around the Isle of Mull, delivered to us on the shell within 8 hours of harvest by the Ethical Shellfish Company who also supply our brown crabs, langoustines and lobsters. We use Eilean Shona mussels and Loch Leven clams. Smoked fish comes from the acclaimed Inverawe Smokehouse and our salmon is the finest and most sustainable there is - from the cold, clear waters of Loch Duart in Sutherland. Exceptional oysters come from just over the border - the historic oyster beds in the Lindisfarne National Nature Reserve.
 
Chapel Farm, East Lothian has been in the Elder family for generations and they supply us with fabulous, organic potatoes.
